When this reaction takes place, heterocyclic amines develop, which have been known to increase the risk of pancreatic, prostate, and colorectal cancers.
If you'd like to reduce the risk of cancer while still enjoying your grilled meats, try adding rosemary beforehand. This can really halt the production of heterocyclic amines by up to 90 percent. But the best way to get past this is to not burn your meat. Turn the heat down and try not to char it.
