A sense of curiosity in a man is always attractive to women, especially if the curiosity is about her and her life. Showing an interest in someone and expressing curiosity about the things they like (even if they're not the things you like) is flattering and shows them that you're interested in them as a person. There's nothing worse than someone who only wants to discuss things they already know about or are interested in.
If you think you might be guilty of only talking about your own hobbies and interests, spend some time listening. Next time she talks about art class, book club, volleyball, cooking, or her other hobbies, ask her some questions. Volleyball may be the last thing you're interested in hearing about, but showing a sense of curiosity will be very much appreciated.
